Palazzo della Torre is partially made using the Appassimento method from a blend of 40% Corvina Veronese, 30% Corvinone, 25% Rondinella and 5% Sangiovese.
Appassimento is produced through a process of partially rack-drying grapes - to increase concentration of both natural grape flavours and sugars. The result is a wine of atypical power, concentration and alcohol content with an ability to benefit from long periods of maturation.
