Ice wine, or Eiswein, is a particularly decadent style of sweet wine in which grapes are left on the vine well into winter. They are harvested by hand—often in the middle of the night—only after a sustained period of freezing temperatures. During this time, the water inside the grapes freezes, and when the grapes are pressed shortly after picking, only the highly concentrated, sugar-rich juice is extracted, resulting in an intensely sweet wine.
