Chateau-Chalon

The wines of Château-Chalon share certain aromatic and stylistic similarities with Sherry, largely due to their oxidative aging under a veil of yeast. However, unlike Sherry, they are not fortified and are always produced as dry wines. Château-Chalon is exclusively dedicated to the production of Vin Jaune (“yellow wine”), made solely from the Savagnin grape. After fermentation, the wines mature for a minimum of six years and three months in partially filled barrels beneath a natural yeast film (voile). Renowned for their structure and concentration, Château-Chalon wines possess exceptional longevity and can benefit from several decades of bottle aging.
