Amontillado is a dry or medium-dry style of sherry which has been both \"biologically\" aged under a crust of yeast (for a distinctive tanginess) and then "oxidatively" aged (gains colour and nutty, leathery characters).
Sherry is exclusively produced in the region of Jerez, Spain. It is made from three traditional white wine grapes only. The Palomino grape is the most commonly used along with Moscatel and Pedro Ximenez.
Palomino is a white grape grown mainly in Spain, best known for its role in sherry production in Jerez. It typically exhibits a neutral flavour profile with high acidity, making it ideal for oxidative aging and creating distinctive fortified wines.
Spain is one of the largest wine-producing countries in the world and is known for its rich and flavourful red wines, particularly those from the Rioja region.
