Blanc-De-Blancs Champagne are made exclusively from the white grape variety, Chardonnay.

Ridge Monte Bello Vineyard Cabernet Sauvignon 2008 California 2x75cl

An iconic name in Californian wine making, Ridge vineyards only began in the 1960's, however, wine has been produced at the site underthe name 'Monte Bello Winery' since 1885. Renowned for producing world-class Cabernet Sauvignon, Zinfandel and Chardonnay, their Bordeaux-style blends are considered rivals to these from the great Bordeaux Chateaux. 

Remoissenet Pere & Fils 1994 Meursault-Charmes 1er-Cru

Chardonnay from the Premier-Cru climat of Charmes within the Burgundian appellation of Meursault.

Remoissenet Pere & Fils was founded in 1877 in Beaune. Over the years the ancient estate has built up one of the biggest collections of aged Burgundy, with over one million bottles, dating back to the 1950s. In 2005, Remoissenet started the next chapter in its generations-long history with new owners and renewed leadership under Pierre-Antoine Rovani.

Hawkes 'PYR' Pyramid Vineyard Cabernet Sauvignon 2006 Alexander Valley 300cl

100% Cabernet Sauvignon from the single vineyard of Pyramid within the Alexander Valley AVA of Sonoma County, California.

The Hawkes family have been growing grapes in the Alexander Valley for over fifty years. The near 120 acre Pyramid Vineyard was planted entirely to Cabernet Sauvignon in 1996 and is named due to the sharp, often terraced hills on which it grows.

This is a 3 litre double magnum bottle. Large-format bottles are great for extended ageing periods due to the wine's slower rate of maturation.

Typically a blend of 95%+ Cabernet Sauvignon with Petit Verdot and Petite Sirah: matured for 18 months in 30% new French oak.

Appassimento wines are produced through a process of partially rack-drying grapes to increase concentration of both natural grape flavours and sugars.  The result is a wine of atypical power, concentration and alcohol content with an ability to benefit from long periods of maturation.

R. Lopez de Heredia Vina Tondonia 2008 Rioja Reserva

A Tempranillo dominant blend from the northern Spanish DOC of Rioja; Matured in oak barrels for approximately 6 years.

Established by Don Rafael López de Heredia in 1877, R. López de Heredia is one of the most well known and respected wineries in Rioja today. An interesting note- when the term \"Reserva\" was defined in the 1970s, the owner of Viña Tondonia, objected on the grounds that the new terms were too lenient - even his most basic wine far exceeding the \"Gran Reserva\" requirements - and so refused to use the new classifications on his labels.

Rioja is arguably Spain's top wine region and is one of only two regions classified under the Denominación de Origen Calificada (DOCa) system. Other than Tempranillo and Garnacha, Graciano and Mazuelo (Carignan) are also used in the red wines of Rioja.

Bouchard & Fils 'Général Muteau' 1971 Volnay / Hospices De Beaune

Pinot Noir from the iconic Burgundian vineyard and appellation of Volnay.

Cuvee Général Muteau was produced on behalf of the world-famous Hospices De Beaune charitable wine auction. Paul-Jules Muteau (1856-1927) was a distinguished cavalry officer, who was promoted to Général in 1914.

Rosemount 'Old Benson' Fine Old Tawny Port NV Australia 3x50cl

A non-vintage sweet, fortified wine from South Eastern Australia. Made in the same style as that of the famous Portuguese fortified wine, Port, produced in the Douro Valley.

Made from a blend of Shiraz, Cabernet Sauvignon and Tokay grapes aged for an average of 10 years. 

Tawny Port is a particular style of Port in which the fortified wines are aged for a number of years in small oak casks.  This process of deliberate and careful oxidative maturation imparts typical characteristics of stewed fruits, nuts and leather. The wines do not age or improve further upon bottling.
