Fontanafredda 'Serralunga D'Alba' 1996 Barolo

Barolo, often referred to as the “king of wines”,  must always be made from 100% Nebbiolo grapes-, and matured for a minimum period of 38 months, 18 of which must be in oak barrels - (traditionally in large Slavonian oak casks).

Barolo wine comes from a traditional village of the same name located in the northern region of Piemonte. It is so revered that it was one of just three wines awarded DOCG status on the same day that the classification was introduced in July 1980. The region encompasses 11 villages in the heart of Piemonte, Most of the estates are small and family-owned, therefore production of wines from the Barolo DOCG is low.

This wine is from the famed commune of Serralunga, just south of Alba in the northwest Italian region of Piedmont.

Fernand & Laurent Pillot 2014 Volnay

Pinot Noir from the iconic Burgundian appellation of Volnay.

The Volnay AOC was created in 1937 and is a located in the Côte de Beaune subregion of Burgundy's Côte d'Or.  The appellation applies to red wine made from Pinot Noir although up to 15% of the white wine grape Chardonnay, Pinot Blanc and Pinot Gris are permitted in the blends- although this is rarely utilised by producers. Almost 30 Premier Cru vineyards can be found within Volnay.

Dolcetto is a red wine grape variety native to and widely grown in the Piedmont region known for its low acidity and soft fruit flavours.

Frescobaldi \"Campone\" 1998 Brunello di Montalcino

100% Sangiovese from the Tuscan town of Montalcino; Classed as a riserva this wine must have been matured for a minimum of 6 years with at least 2 years in wood and 6 months in the bottle.

Brunello di Montalcino is one of the great under-appreciated wines of Italy.  100% Sangiovese which undergoes an extended period of pre-fermentation maceration to extract maximum colour, flavour and tannins which affords the wine its ability to mature for long periods.  Brunello di Montalcino must be aged in oak - commonly Slavonian oak - for a minimum of 2 years, though traditionally winemakers would age their Brunellos in oak for at least 3 years prior to release.

Gonzalez Byass \"Matusalem\" 30 Year Old Cream Sherry 37.5cl

Cream sherry is a sweetened blend of dry wine such as Oloroso with naturally sweet Pedro Ximénez, Moscatel or Amontillado sherries- produced originally for the British palate.

This sherry was produced by González Byass- one of Spain's most well-known sherry bodegas, and matured in a single oak barrel for 30 years prior to being bottled.

Graham's 1994 LBV Port

Late Bottled Vintage (LBV) Port is a specific style of Ruby Port in which the fortified wine - from a single, specified vintage - is aged for an extended period of time before bottling.  Unlike Vintage Ports, LBV Ports do not continue to mature in the bottle.

Graham’s, one of the most famous names in the Port trade, was established in 1820 by William and John Graham. Today Graham’s remains a family-owned firm after being acquired by the Symington family in 1970.

Findlater's Fine Full Ruby Port

Ruby Port is a relatively simple port made from a blend of young wines from multiple years. Matured in massive vats or tanks which prevent any significant oxidative effect which preserves the naturally ripe red berry character of the base wines. Ruby Ports do not improve with bottle age.

Giotti Extra Dry Valdobbiadene Prosecco Superiore 300cl

Prosecco is an Italian wine region which belongs to the larger region of Veneto. It must be made from a minimum of 85% of the white wine grape, Glera- formerly known also as Prosecco. Prosecco is almost always made in sparkling (spumante) or semi-sparkling (frizzante) style but a still wine (tranquillo) is also permitted.

This is a 3 litre double magnum bottle. Large-format bottles are great for extended ageing periods due to the wine's slower rate of maturation.
